Day 3: Emotional Day

Today my little guy had a tough time at Preschool. His teacher gave me some news that broke my heart. It made me reflect about how I am doing as a mother. It was hard to look back and see all the changes I can make, to make things better. You just want the best for the ones you love. You want them to have a better life then you did. I took him out for ice cream to talk about what happened at school. Didn't get much more information, but I wanted to show him that I love him and I am here for him. I am probably emotionally over reacting, but It made me see that I need to change some things at home, especially with Daddy spending 95% of his time at school. With having such an emotional today, easy and fast food always hits the spot, but I didn't give in and ready for day 4.

Breakfast: fruit
Lunch: left over rotisserie chicken and salad
Dinner: left over hamburger lettuce sandwich with broccoli

Day 2: I survived Super Bowl Sunday

Today was tough! Not because it was Super Bowl Sunday, and there was soda, chips, potato salad, fruit dip, cake. Did I mention cake? A chocolate cake, in a football shape, looking so moist and divine, with creamy icing that you can smell a room away.  Was I tempted, of course! But was very satisfied eating my delicious hamburger, hold the bun, topped with tomato, grilled onions and a pineapple, all wrapped in lettuce. Yum! And it only gets better. Had some homemade sweet potato chips and guacamole. Although, there was food sitting on my kitchen table, not part of my challenge, today was tough because I sliced part of my finger off! It was unpleasant, scary, lots of blood, and went to the emergency room because we couldn't get the bleeding to stop. I also had to get a tetanus shot, but after all the chaos, I made it back home in time for our guests.  Sorry, no pictures again.  It was a little chaotic with a trip to the ER and the Broncos breaking my husband's heart. Glad to say, Football is over, but baseball season will soon be creeping up.

Lunch: Veggie Omelet 
Dinner: Hamburger, sweet potato fries and guacamole

Day 1 Busy Busy Busy

Took our little man this morning to Home Depot kid’s workshop at 9:00am. So breakfast was quick. We grabbed some fruit, the little guy had some cereal, and we headed out the door to make our very own wooden race car. No pictures of food today, but I did capture my boys hammering away. We stayed around the area and did some shopping. Tee Ball season is around the corner, and Dick's Sporting Goods and Academy Sports were having some great sales. After all our shopping, we were pretty tired and a quick meal was looking tempting. So, we went home and made some veggie omelets with peppers, onions, and mushrooms for lunch. I like to top mine off with tomatoes, avocados and a couple of dashes of hot sauce. Yum! I pretty much have a veggie omelet every day and I love it. Well, tomorrow is a big day, Super Bowl Sunday! And football is a big thing for my husband. We recently moved from SLC, UT to Macon, GA to attend Law School, and back in Utah we always got together with one of our best friends and enjoyed those cute little smokies, chips, soda, etc. The WORKS. This year, we invited some people over for the game, and I was kind of panicking a little, but I think we figured out a great meal for us. If we can eat Whole 30 on Super Bowl Sunday, then we can mostly definitely do this challenge again. Also, you’re not supposed to weigh yourself while doing the challenge, which was a rule we broke our first time around, and so this time I am not. This time, it’s not about a number, but how I feel and building up my self-confidence. Okay, so here is what we ate.

Dinner: Rotisserie Chicken and Salad

Goal Update

Update...Had a little setback on my goals. That Christmas Holiday was tough! A friend told me that she was going to take the Whole 30 challenge and I was looking for something to motivate me. I already took the challenge over the past summer, but was willing to do it again because I enjoyed very much who I was and becoming. BUT a week into it, I fell of the wagon and, yes, I cheated with a slice of pizza. It was a long day and was too tired to cook. It's the end of January and kicking myself for cheating. When I first took the whole 30 challenge this past summer, I kept a record of my journey through Facebook pictures, and I am realizing that it helped me be accountable. I end the month of January with a late night snack, belly full of popcorn and 3/4 of a Dr. K soda with a lime, watching biggest looser, feeling bloated and ready to take the challenge again, and as for my accountability problem, I will be posting my journey through this blog. I hope it helps motivate others. My journey so far started last year, with losing all my pregnancy weight and marriage weight, and have 10lbs to lose for my ultimate goal. Let’s crush this!

Wrapping up Whole 30. Why did I choose to participate in this ridiculous diet? Because I was looking for a quick fix to finally achieve a number on a scale. Did it work? Of course it did. However, I never imagined myself choosing to live Paleo. On Day 3, 9, 20...you get the point, my husband and I talked about what we were going to eat on Day 31. Ice cream, brownies, Cafe Rio, hot chocolate, cookies. The list was very long and I am drooling as I even type them. Who doesn't like sweets? Well, I most definitely enjoy them! However, I have enjoyed my new healthy body more. I enjoy the face I see every morning. My sweet husband and son ;) and of course mine too. I enjoy not feeling bloated in the morning after a night of late night sugar snacking. I haven't experience more energy as some have, but I definitely don't get tired as easily. I have enjoyed the cooking and fruit has never tasted so sweet. My new “carb” indulge are macadamia nuts and sweet potato fries. Yum!! Day 30 is this coming Monday and I have been thinking a lot about, what's next. I choose to eat, drink, sleep, LIVE Paleo. So here is my journey and excited to share it with whoever is out there.
